Easy and Healthy(ish) Chicken Pot Pie

We have been snowed-in here in Virginia since Friday.  For some reason, my nesting instincts are tied to snow storms and I have been cooking like a fiend (until today when we finished digging out and I stopped cooking).


One of the things that I made was a really good, and really easy, Chicken Pot Pie recipe from Real Simple Magazine. This recipe uses no butter so it has fewer calories than many other recipes.   I made two changes: one was to add a bottom crust that I baked, empty, for about 10 minutes. The second change was that I used dried Thyme since I did not have fresh. It came out beautifully; it sliced nicely and was easy to serve. Best of all, if you have some frozen pie crusts, you probably have most--if not all-- of the ingredients that you will need in your pantry already.

I can totally relate to the nesting instincts. When it is cold, I love to make a pot of homemade soup...and some warm, baked good. We have brownies today.  So thankful for a warm house. I don't do well in COLD!! :)

Will be snowsledding or cross country skiing or snowshoeing over for some of that chicken you tease us with. It is nice to be inside, warm, cooking for the family, power on and having plenty to eat during a snowstorm. Had four kids and remember them asking "Dad..do you think we'll have school tomorrow?"

HA!  I cooked all day Friday to store food for several days in case of electrical outage, didn't happen.

Yesterday, since the electricity was still on, I cooked more. 

I'VE GOT TO GET OUT OF HERE before I eat myself into oblivion. 

My driveway is scheduled to be cleared early tomorrow.  Hurray!

P.S.  I'd pass on a recipe for pot pie that has about 1/3 the caleries, 1/10th the fat and is fabulous tasting, but folks would think me obnoxious.  You youngsters can take food like that. 

No way I can keep my gorgous body eating that much fat, salt and caleries.
